Ingredients
Duck Legs
Ground paprika
Salt
Sweet chilli sauce
Salad onions
Cucumber
Rice
Gressingham Plum and Housin Sauce
Method
Turn your oven on 180 degrees centigrade using top and bottom heat.
Wash your duck legs and put in a roasting dish. Salt. Then smother with paprika.
Place in the oven for 70 minutes.
Lower the oven temperature to 160 degrees centigrade. Remove the legs and smother them thoroughly in sweet chilli sauce.
Place back in the oven for a further 20 minutes. Make some rice.
Remove from the oven and pull the skin off the meat using a fork and spoon. Then pull off the bone and chop up. Smother the meat in the sauce at the bottom of the dish to serve.
Put the roasting dish on the table so everybody can serve themselves.
Serve with sliced spring onions, cucumber and your favourite rice which can be mixed with the plum sauce when served.
